Program Description
Build a successful career in the baking industry with our hands-on Baker Program. Learn essential skills in bread, pastry, cake, and dessert production including ingredient preparation, dough and batter mixing, baking, decorating, food safety and quality control. Graduates are prepared for careers in bakeries, hotels, restaurants, cafe and commercial food production or to start their own baking business.

General Admission Requirements
Applicants must meet the following requirements to enroll in the Baker Training Program:
- Technical Training Requirement: Applicants must complete 12 weeks of technical baking training as part of the program requirements over a 3-year period.
- Work-Based Training Requirement: Applicants must complete 5,040 hours of work-based training to gain hands-on experience and develop professional baking skills in a workplace environment.
Applicants should demonstrate the ability to develop and apply the following skills:
- Creative Skills: Ability to use creativity in baking, decorating, recipe development, and presentation of baked goods.
- Expressive Skills: Ability to communicate effectively and present baking concepts, techniques, and finished products.
- Precise Skills: Ability to follow recipes accurately, measure ingredients correctly, and maintain consistency and quality in baking processes.
- Visual Skills: Ability to recognize product quality, presentation standards, and visual details in baked goods and bakery products.
Learning Outcomes
Upon completing the course, participants will be able to:
- Prepare Doughs and Batters: Prepare a variety of bread, pastry, cake and specialty doughs and batters using professional baking techniques and industry standard recipes.
- Decorate Baked Goods: Apply professional decorating techniques including icing, piping, glazing and finishing to cakes, pastries, cookies and desserts.
- Maintain Quality Standards: Produce consistent, high-quality baked goods by following quality control procedures and maintaining accuracy throughout the baking process.
- Operate Commercial Baking Equipment: Safely use and maintain commercial mixers, ovens, proofers and other bakery equipment in accordance with workplace safety standards.
- Practice Food Safety and Inventory Management: Receive, organize, store and handle ingredients using proper food safety, sanitation and inventory control practices.
- Demonstrate Professional Workplace Skills: Apply effective time management, teamwork, organization and production planning to meet deadlines in fast paced bakery environments.
Additional Information
Trade Qualifier Certification Pathway
Individuals with extensive experience in the electrical trade may be eligible to challenge the certification exam as a Trade Qualifier and obtain certification without completing a traditional apprenticeship program.
Before applying applicants should ensure they meet the following requirements:
- Have the required hands-on work experience hours and demonstrate experience across the required scope of electrical trade tasks.
- Provide valid work references who can verify previous and/or current electrical work experience. References may be contacted by phone as part of the verification process.
- Ensure current and previous employers can confirm employment details. Verification may involve contact with company owners, Human Resources representatives, managers or supervisors.
- After approval applicants must schedule and successfully complete the certification exam and practical assessment (if required) within the approved timeframe.
The Trade Qualifier pathway provides experienced electrical professionals with an opportunity to have their skills and knowledge assessed and achieve certification through the challenge exam process.
